This month’s EduProctor Spotlight features Letica Garcia, a committed food safety leader from La Porte, Texas, whose passion for public health has shaped her career as a health inspector, instructor, and EduProctor™.

 

Personal & Professional Journey

Letica’s journey into public health began with her passion for community service and a desire to protect people where it matters most—at the table. Early in her career as a health inspector, she witnessed how one small mistake in food handling could put an entire community at risk. That eye-opening moment sparked a lifelong dedication to prevention, education, and compliance.

Living and working in Texas, a diverse, fast-growing state with deep food culture, has given Letica a unique perspective. She emphasizes that food safety education must be practical, culturally aware, and accessible to everyone, whether it’s a small family-owned restaurant or a large facility.

Her many roles complement each other seamlessly:

  • Health Inspector – enforcing regulations and ensuring compliance.
  • Instructor – guiding, teaching, and mentoring food managers and staff.
  • EduProctor™ – ensuring fairness, credibility, and certification.

Together, these roles create what Letica describes as a “full circle of prevention and education.”

Her time in the government sector further shaped her views, giving her a respect for structure, fairness, and the balance between education and enforcement. “The ultimate goal isn’t punishment—it’s protecting public health,” she explains.

 

Teaching & Impact

For Letica, the most rewarding part of teaching is witnessing that moment when it all ‘clicks’ for a student—when food safety becomes more than just rules and transforms into responsibility for protecting real people.

The key message she hopes every food manager takes away?

“Food safety is personal. Every decision you make in the kitchen affects someone’s family, child, or loved one.”
